Equipment and surfaces were dirty.

Inspector’s note: Observed exterior nonfood-contact surfaces of deep fryer and cooler (between equipment) to be soiled with dried food debris and grease soil. Instructed to clean nonfood-contact surfaces of equipment at adequate frequency to prevent build up of dried food debris, grease, and other soils and maintain.

Ventilation or lighting was inadequate.

Inspector’s note: Observed heavy build up of grease and condensation on ventilation hood filter panel directly above deep fryer. Instructed to clean ventilation hood filter panel and maintain ventilation hood system and filter is adequate in number and capacity to prevent significant build up of grease and condensation on adjacent surfaces.
